We take as much pride in the processing of our product as we do in how we do in the wholesome methods in which we raise it. To keep animal stress to a very minimum, our stock are loaded and trucked by us, to a USDA inspected processor less than ten miles from our farm. The carcasses are dry aged the specie appropriate length of time, then cut, labeled , packaged to our spefications, and frozen.  this is how the product arrives at your door.
