We are in the sunshine harvesting business and are very proud of that fact. In farming grass, we grow a crop that is fed by the soil and sun and harvested by our animals producing a wholesome delicious meat much higher in omega 3 fatty acids, CLA's,  vitamin E and beta-carotene than their confinement raised counterparts.
 
Our fundamental philosophies of "as much grass as possible" will not be compromised in order to provide , for example, a year around supply of fresh chicken if it results in us raising the animals indoors during the non grass season.  We match our animal cycles to nature's cycle. Meat chickens are raised when there are fresh clover and grasshoppers to eat. The calves and piglets are born when the wild deer have their fawns so that thier mothers can produce the best of milk on green grass for the growing babies. 
 
Highland Beef It would actually be much easier and require ALOT less skill to keep all of our animals on concrete floors indoors and substitute our husbandry practices with medicated rations and water.  And we would have a year around supply of "meat".  But guess what...not on this farm! Go with the flow of the seasons along with us. In the summer, eat more of our fresh eggs and chicken, then plan ahead stock your freezer for the winter.
