Since the sixth century, highland cattle have grazed the rugged Scottish landscape.  Being bred for their ability to prosper in inclement weather and  produce a meaty carcass on forages alone, this cattle breed is a natural choice for this grass farmer.  These are a heritage breed of cattle touted for their lean meat, unique flavor, and ability to grow on a totally natural all grass diet. Our hogs are raised in rocky woodlots and meadow paddocks with plenty of fresh air, green grass, and sunshine. Wild forages make up as much as 50% of our hog’s diet. The happiest pigs in the world!

This is the closest meat to wild venison that you will ever legally purchase.  Our breeding stock originates in Montana and has been developed from Old world Spanish /Cashmere goats crossed with the South African Boer Goat for improved carcass muscling. Browsers by nature, goats thrive in our mountainous environment on weeds, shrubs, tree foliage, and grasses. These animals are raised on the exact same diet as wild whitetail deer. Since pre biblical times, Chevon has been more widely eaten than any other kind of meat.

Sunshine ChickenSunshine Chicken

There is simply no substitute for pasture raised chicken and eggs. These birds are raised in portable pens that allow total access to  green grass and fresh air. Wild forages and insects make up to 30% of our birds diets. Whole grains fill the balance.  Healthy animals do not get sick! Therefore our birds do not need the routine constant use of antibiotic laced feed and water, and anti parasite medications. It is the stress of overcrowding and lack of access to sunshine and fresh greens that make the factory raised bird such an inferior product to our grass raised birds.

Over 1000 years ago, when the Viking settlers first explored the Shetland Islands, they brought with them a very hardy breed of sheep for meat, milk and fiber.  Centuries of basically natural genetic selection have produced the very hardy Shetland sheep that today grazes the heather from remote hill pastures, native grasses from the lowlands, and seaweed from the rugged Shetland Island coastlines.  

So what does this rugged island 100 miles north of Scottland have to do with Big Horn Ranch?  Simple. It fills our niche of producing meats as close to the wild specie as possible.  These grass born,  grass fed Shetland lambs are grown on lush Northern Pennsylvania pasture grasses and legumes and available exclusively through Big Horn Ranch.  Shop our e-store for further product details.
